From 1893 the now historical pastry shop Donnini has tempted the Florentines and the passing visitors with a rich variety of pastries and cakes of heavenly fragrance and refined taste. This bar was started in 1897 by the brothers Reininghaus, German beer brewers. Following the Viennese style of that time, the waiters wore red jackets; the Florentines, finding it difficult to pronounce the foreign name of the caffè, preferred to say "lets go to those with the red jackets". In 1913 it became the headquarters of the Florentine futurists, transforming itself in a place of meeting for Italian and foreign artists and writers. After World War II, the popularity of the the place slowly faded until 1991, the year in which the new management decided to reclaim its old image by attracting young artists and programming intellectual meetings and shows.

Beginning in 1920 as a dairy store authorized to retail "milk and coffee", after many years in which its activity was limited solely to the retail of milk, in 1984 the new owner started to serve breakfast in the old-fashioned Italian way, with bowls of caffelatte (a hot milk and hot coffee mixture) toasted bread, butter, jams, sweet-rolls and pastries prepared in the kitchen in the back of the store. The business has continued to sell milk and other dairy products so as to preserve the service they had always provided to the neighbourhood. The area, once used as a butcher-shop in the 800s, still contains the original marble-topped counter with a chiselled emblem of a cow, and with patience and care, it has been returned to its ancient atmosphere.
